A "critical violation" is one that "poses a direct or immediate threat to the safety of the food being served." Non-critical violations are generally related to cleaning or maintenance.

7 Critical Violations, 1 Non-Critical Violation
  • Non-Critical: Employees were not trained in food safety, heating or cooling
  • Critical (Corrected during inspection): There was no certified food manager present at the time of the inspection 
  • Critical Repeat: Cutting board surfaces were soiled to sight and touch. 
  • Critical (Corrected during inspection): Dishes and utensils were not being properly cleaned due to the low temperature of the dishwasher
  • Critical (Corrected during inspection): Utensils were not sanitized
  • Critical (Corrected during inspection): These foods were being held at improper temperatures under a heat lamp- Stroganoff, casserole, sausage and peppers 
  • Critical Repeat (Corrected during inspection): These foods were being held at improper temperatures in the refrigerator - hamburger patties, raw chicken, sliced ham, cooked ribs, penne pasta salad and grilled chicken breast
  • Critical (Corrected during inspection): An unmarked spray bottle with chemical cleaning solution was found at the bar area.
