Restaurant Inspections: La Tolteca in Fairfax Station

A "critical violation" is one that "poses a direct or immediate threat to the safety of the food being served." Non-critical violations are generally related to cleaning or maintenance.

2 critical violations, 1 non-critical
  • Critical Repeat: The kitchen stored dented cans of jalapeno peppers
  • Critical: Wet wiping cloths were stored on a counter instead of in a chemical sanitizer solution  
  • Critical Repeat: The following food was stored at the wrong temperature (should be 41 degrees): Guacamole (47-F); shredded cheese (50-F), sour cream (51-F); raw marinated chicken (51-F) and raw marinated beef (47-F)
